Here's
my Favorite Summer Recipe:
Gazpacho
(from The Vegetarian Epicure)
5-6
large ripe tomatoes
1 large cucumber
1/2 onion
1 clove garlic
1/2 c chopped watercress
3 T olive oil
3T red wine vinegar
2tsp salt
2 1/2 cup cold water
Garnish:
chopped cucumber
chopped bell pepper
chopped onion
hard boiled egg
croutons
Preparation:
Blanch tomatoes to remove skins, cut into wedges. Peel and
seed cucumbers, chop onion and garlic. Puree in blender, adding
watercress to last batch. Pour puree into a large bowl and
add olive oil, vinegar and salt. Wisk until smooth. Taste
and correct seasoning to taste. Add cold water and chill in
refrigerator until ready to serve.
